But I must diagree. He's not a sadist in a strict sense of this word - like tortures or such. Mental mind-fucking, yes, for his amusement, but it was shown in manga that he mostly avoids open fight and violence, and finds many things unworthy of his attention and time. Thus, he's not an insane sadist. Just ambition-obssessed insane. I hope you get what I mean : )

My opinion is still "young", if you will, I just started watching shippuuden a few weeks ago.
There's still a lot about Itachi that I don't know, pwease don't blame my lack of knowledge. lol, just kidding.
